Il Monte Caro Amarone 75cl
The Amarone della Valpolicella of Il Monte Caro is an important wine obtained solely from hand-picked Corvina, Corvinone and Rondinella, placed on boxes and gently pressed after a long drying. The fermentation lasts about 30 days by controlling the temperature of the tanks and without adding any chemical component such as enzymes, tannins or yeasts.,The color of our Amarone is an intense, almost impenetrable ruby red. The scents are strongly balsamic at the beginning and then turn towards a minerality that leads back to our limestone and flint. At the end we find aromas of ripe red fruits, which we perceive intensely in the hot 2017 vintage. This is a decidedly soft wine, in accordance with the withering process, while remaining decidedly fresh and sapid thanks to the aging in steel only.
