Il Monte Caro Valpolicella Superiore 75cl
The Valpolicella DOC Superiore of Il Monte Caro is an elegant wine obtained solely from Corvina, Corvinone and Rondinella harvested by hand at the end of their moment of maturation and gently pressed. The fermentation lasts about 10 days by controlling the temperature of the tanks and without adding any chemical component such as enzymes, tannins or yeasts. This wine is aged in steel.,The color of our Valpolicella DOC Superiore is an intense ruby red. All the aromas are of ripe red fruits, especially cherries and black cherries. Its freshness is well supported by a pleasant acidity. We find the perfect balance between acidity and softness. In 2017 we find the notes of black cherry accompanied by an interesting peppery spice, the result of a warm and fairly balanced season.
